Holding Onto Summer

In an effort to keep summer rolling I recently played around with two summer recipes I found on Pinterest. I thought they both turned out pretty well, but you'll have to try them yourself!

Tequila Soaked Watermelon...

SONY DSCWhat you'll need:

Tequila, Triple Sec, Sugar, Water, Salt, Limes and... Watermelon!

watermelon into slices and lay them on a cake pan (9x13 or bigger works best)

SONY DSC SONY DSC SONY DSCYou'll then put 1 cup of sugar, 3/4 cup water, 1/2 cup Tequila, and 1/4 cup Triple Sec into a sauce pan. Let it get to a boil and then take it off the heat. The important part is that the sugar has dissolved. After it's cooled a little, pour it over the watermelon. Then place the pan of watermelon in the fridge for an hour. After the hour is up sprinkle with salt and lime juice!

SONY DSCDelicious! The alcohol wasn't over powering either which is good!

Cucumber Salad...

What You'll Need:

3 Cucumbers, 2 packages of grape tomatoes, 2 avocados, 2 cups plain greek yogurt, and salt & pepper.

SONY DSCCut up your cucumber either into halves or quarters (it's really up to you!). I didn't cut my tomatoes because they were already pretty small but you could cut those too if you wanted.

SONY DSCAfter you've cut up your cucumber, throw it in with the tomatoes. Then add your greek yogurt and salt & pepper to taste. Depending on how much you like greek yogurt you can use more or less in this recipe. After all that is mixed together, slice your avocado and add it to the salad!

SONY DSCSuch a simple and healthy summer salad! This recipe make about 10 servings.

Just thought I'd share a little bit more of summer before everything PUMPKIN makes an entrance haha.
