Pasta Carbonara


Yup. You've guessed it! Another recipe with...Kale!

This a very light dish and it's quite simple to prepare.

Ingredients: Pasta (Any kind! I used linguine noodles), Prosciutto, Kale, 1 egg, dry white wine, Parmesan cheese, Romano cheese, and salt & pepper.

Step 1: Cut up the prosciutto and brown (medium heat) in the pan with olive oil. Add 1/4 cup of a dry white wine. Cook down until it's all been absorbed.

Step 2: Cook pasta and add kale to the boiling pasta for the last three minutes.

Step 3: Drain pasta and kale and then put it in the pan that cooked the prosciutto. Return to medium heat.

Step 4: Whisk up the egg with the cheeses and s&p. Then add that mixture to the pasta.

Once the egg mixture is no longer runny and your pasta is heated to the desired temp, you're all done!

These days I'm all about simple meals. Most of the time I have at least one baby attached to me as I cook. Plus I have to be on my guard the entire time I'm at the stove because Peter is getting taller and he reaches for everything!! I love this dish because it's easy to prepare and it tastes good. Peter really enjoyed it and if he'll eat it, I'll keep making it! There are a lot of things you could add/substitute in this meal. Like

try pancetta instead of prosciutto, or spinach instead of kale. The possibilities are endless!
