Ok so Lent is definitely over. Pretty sure everyone is enjoying thick steaks wrapped in bacon. As they SHOULD.

However if you'd rather not die at 35 or if eating animals is not your thing...

I have something that you might like. I came up with this recipe during one of the meatless Friday's of Lent. It's super simple and doesn't take a lot of time. Honestly? This recipe was also me starring at the fridge wondering what to make for dinner and then just throwing a bunch of random stuff together. Sometimes that works out and sometimes it goes nuclear. In this case it worked out. Which was good news for the Starbuck Household, otherwise it would've just been cereal for dinner.

cooked up one cup of Quinoa. For every cup of quinoa, cook in two cups of water, for about 15 minutes.

~I then used up some leftover sweet potatoes (that had been boiled the night before) diced them up and browned them in the pan with olive oil.

~After the potatoes were browned I added a strained can of chick peas to the pan.

~Then I added kale with some extra olive oil to soften the leaves.

~After all of the ingredients were in the pan I added garlic powder and Mrs. Dash.

~All the veggies went on top of a huge scoop of quinoa and then I added mozzarella cheese to the top!

Done!

Of course you could always add meat to this dish too! I would suggest ground turkey or a grilled chicken breast. I bet some lemon salmon would pair nicely as well. Oh and also some white wine. That would be good too haha.

Anywaysssss I'm no cook. It's not one of my strengths by any means BUT when I stumble upon something somewhat decent I like to share.
